I Love Chocolate Chip Cookies! If eating cookies didn't affect my health or weight I would eat them everyday. With my lack of willingness to control my love of cookies I just bake one cookie..yes, one cookie!
3 tbsp all purpose flour
1 tbsp coconut sugar
1 tbsp dark brown sugar
1 tbsp grapeseed oil
½ tbsp water
½ tbsp flaxseed meal
⅛ tsp sea salt
⅛ tsp baking soda
¼ tsp vanilla extract
2 tbsp vegan chocolate chips
Heat the oven to 350. Line a sheet pan with parchment paper.
In a small bowl, stir together the flour, flaxseed meal, salt, baking soda and chocolate chips. In a separate small bowl, whisk together the coconut sugar, dark brown sugar, grapeseed oil, water and vanilla.
Add the wet ingredients to the dry ingredients and combined. If the dough seems too wet sprinkle a bit more flour into the dough.
Form the dough on parchment-lined baking sheet. Form it into a circle (flatten some).
Bake for 12-13 minutes or until the edges are brown and the cookie looks fully baked.
