Level Up Vegan Greens Recipe

Ingredients:


2 tbsp. grape seed oil

1/2 onion chopped

2 or 3 cloves garlic chopped

1 red sweet pepper chopped

3 sprigs thyme (stems removed)

3 c. fresh Collard greens sliced (stems removed)

2 c. fresh Cabbage sliced

1/2 c. fresh corn cut from cob

1/4 c. shredded carrots

2 stalks green onion

1 mildly spicy pepper (optional)

All purpose seasoning to taste



Instructions:


  1. In a large skillet add the oil and saute the onions and garlic until slightly translucent.

  2. Mix in the peppers and thyme for about 3 mins.

  3. Add the corn, carrots, green onions and mildly spicy pepper lightly sprinkle seasoning and cook for 3 more mins.

  4. Combine the collard greens to the pan and allow them to stem and wilt down while stirring.

  5. Lastly, add the cabbage in and lightly season while combining all ingredients. Once the cabbage has wilted to your desired texture taste and add more seasoning if needed.
