-Boil:
1 cup potatoes peeled/diced
1/2 cup of red bell pepper diced
1/3 onion diced
1/4 cup carrots diced
1 tbsp green seasoning
3 cups water
Adobo seasoning and Pepper to taste
-Blend:
3/4 cup water from boiled veggies
All cooked veggies (drained)
1/2 cup raw cashews
1/4 cup canned coconut milk
3 tbsp nutritional yeast flakes
1 tablespoon apple cider vinegar
1/4 tsp garlic powder
1 pinch paprika
1/2 cup vegan cheddar cheese (optional)
