Vegan Kidney Beans
Canned beans can be made to taste fresh with a burst of flavor! Add colorful peppers and onions for a quick side dish. Pair with some seasoned rice for a complete meal.
1 can dark red kidney beans
1 can light red kidney beans
3 green onions sliced
1 bell pepper (use 1/2 of 2 different colors)
1/3 c red onions diced
season to taste
Rinse and drain the canned kidney beans.
In a medium size pot on medium-high heat saute onions and peppers for 2 minutes.
Add the beans, seasoning and water to just cover the beans.
Cook for about 20 minutes and taste to adjust seasoning.
