Vegan Southern Potato Salad

Ingredients:


5 lb. Russet Potatoes (about 8 Medium Russets) 1 3/4 c. homemade Mayonnaise

1 16oz can Chickpea, smashed 3 tbsp. Prepared Mustard (regular, Dijon Or A Mixture Of Both) 1/2 c. yellow onion, diced

1/2 c. Shishito/green bell pepper, diced 3/4 c. homemade sweet relish or bought 1 tsp. Kosher Salt (more To Taste) 1/2 tsp. Paprika 1/2 tsp. Black Pepper


Instructions:

Wash and peel potatoes, cut them into thick squares. Boil them in water for 15 to 20 minutes, or until a fork can be easily inserted. Drain them in a colander. Mix all ingredients in a large bowl and top with paprika for garnish and added flavor.
