Sweet potatoes can add the perfect balance to a spicy flavorful dish.
2 medium sweet potato, cubed
8oz. cremini mushrooms diced
3 green onions sliced
1 cup black beans, cooked, drained, and rinsed
Olive oil, for saute
½ teaspoon chili powder
½ teaspoon cumin powder
4 to 6 corn tortillas
Sea salt and ground black pepper to taste
Preheat oven to 400° F and line a large baking sheet with parchment paper.
Toss the sweet potatoes with olive oil, chili powder, salt and pepper, and spread onto the baking sheet. Roast for 20 minutes, or until golden brown.
In a pan saute mushrooms and green onions with cumin powder, salt and pepper to taste.
Add the sweet potatoes and beans to the saute pan and combine all ingredients.
Warm the corn tortillas and serve with homemade salsa and guacamole (recipe included on the Raw Taco Recipe).
