Vegan Tofu Scramble Recipe

Ingredients:

16 oz. organic extra firm tofu (drain & squeeze)

1 small onion (chopped)

1 medium red bell pepper (chopped)

1/2 c. bella mushrooms (sliced)

1/2 c. spinach

2 tbsp. olive oil

1 tsp. turmeric powder

2 cloves garlic (chopped)

1/2 tsp. adobe seasoning

2 shake of red pepper flakes


Instructions:

  1. In a large skillet add the oil, onions, garlic and red pepper flakes. Saute until onion start to get translucent.

  2. Add the tofu, tumeric and adobe seasoning, combine and saute for 3 or 4 minutes.

  3. Mix in all remaining veggies and cook for 2 more minutes.



Topping:

1 avocado (sliced)

1 roma tomato (diced)
