1 lb. Beyond ground beef
2 cups Kale, chopped
2 chicken-less bouillon cubes
1 1/2 teaspoons turmeric powder
1 tsp garlic powder
1 tsp onion powder
2 cups of white beans(navy, kidney) rinsed & drained
2/3 cup Orzo, uncooked
8 cups water
3 green onions, sliced
Salt and pepper to taste
Oil for saute
Use a small cookie scoop to make your ground meat into balls.
In a large soup pot on medium high heat add some olive oil place your meatballs in a single layer. Brown on both sides.
Stir in your chopped kale until slightly wilted. Season with bouillon, turmeric, garlic and onion powder.
Add the beans, Orzo and water; sprinkle a little salt and pepper.
Simmer and occasionally stir until the Orzo is done to your liking. Add the green onions.
