Raw Vegan Zucchini Alfredo Noddle Recipe

When eating raw you can have limitless options, it doesn't have to be a salad for every meal. This recipe will fill your craving for pasta.

Ingredients:

2 medium zucchini (spiralized)


for the sauce:

1 cup raw cashews, soaked for an hour, and drained 2 Tbsp of nutritional yeast

1/2 cup water 1 clove raw garlic 1 Tbsp fresh lemon juice 1/4 tsp. onion powder 1/2 tsp. sea salt pepper, to taste

*Top with a dash of paprika and parsley


Directions:

Throw all the ingredients for the sauce into a high-powered blender, and blend until smooth and creamy. Adjust seasoning to taste, then serve over your zucchini noodles!
