Vegan Baked Spinach & Meatball Pasta




I could stop at the grocery store everyday to pick up fresh veggies but I'm limiting my trips. I really need to use what I have in the house already.


INGREDIENTS:

1 12oz. Noodles (I used Cavatappi)

1 24oz. Tomato Sauce( I used tomato basil)

1 9oz. Chopped spinach (frozen)

1 LB. Vegan meatballs

Topping: mix of vegan cheddar & mozzarella


INSTRUCTION:

Boil noodles as labeled on the box and drain.

Saute meatballs until brown, add spinach and sauce until hot.


ASSEMBLY:

Put a little sauce on the bottom of a baking dish so the noodles don't stick. Add meatball sauce on top with cheese. Cover with foil and bake at 350 degrees until cheese is melted. Remove the foil and turn the oven on broil.


Watch it closely, you just want it to look a little golden.
