Vegan Coleslaw Recipe

Ingredients:
4 cups green cabbage, shredded
2 cups red cabbage, shredded
1 cup carrots, julienned
*optional: get the premixed coleslaw veggie package from the produce section
Coleslaw Dressing Ingredients:
2/3 cup homemade vegan mayo
2 tablespoons red wine vinegar
1 – 2 teaspoons pure cane sugar or pure maple syrup
salt & pepper, to taste
INSTRUCTIONS Dressing: In a small bowl, whisk the mayo, red wine vinegar, sugar, salt, and pepper. Assemble: Add the cabbage and carrots or coleslaw mix veggie pack in a very large mixing bowl. Pour the dressing all over and toss well to combine. Salt & pepper to taste.

Coleslaw a great side item or topping for a vegan hotdog/burger.
