Ingredients:
• 2 14oz. can Hearts of Palm Linguine noodles, drained
• 3 cups Broccoli florets
• 1 medium yellow onion, chopped
• 2 medium tomatoes, chopped
• 2 cups Cremini mushrooms, sliced
• 1 15oz. can Coconut Milk
• 5-7 slices Follow Your Heart American Cheese
• 1 tsp green seasoning (garlic & herbs)
• 1 chicken-less bouillon cube
• Red pepper flakes (Optional)
• All purpose seasoning to taste
• Oil for sauté and roasting
Instructions:
1. On a lined oil baking sheet lightly season the broccoli and mushrooms, roast in the oven on broil for about 15 min. Set aside.
2. In a large pot on medium high heat add oil, onions, bouillon cube and green seasoning(or garlic & herbs of choice); sauté until translucent.
3. Add the tomatoes, coconut milk and lightly season- optional pepper flakes. Simmer for 5 mins.
4. Mix the roasted veggies in the pot and add noodles.
5. Combine the vegan cheese with the noodles until melted.
