Vegan Okra Fritters Recipe

Ingredients:

16 medium/ small fresh Okra sliced

1/4 cup red onion finely chopped

3 green onion thinly sliced

1 sweet bell pepper finely chopped

1/2 tsp Baking powder

All purpose seasoning to taste

1 pinch of Cayenne pepper

1 cup all purpose flour

3/4 cup water

Grape seed Oil to fry




Instructions:

1. In a skillet add about 2 tablespoons of oil, then add the red onions, green onions, sweet bell pepper and green seasoning. Saute them for a few seconds.  Add the sliced okra and cook for about 3-4 minutes. Season to taste.


2. Transfer cooked vegetables to a large bowl. Add the flour and baking powder; mix and coat all veggies.  Add the water and mix together well. The consistency should almost resemble a wet cookie dough.


3. Add about an inch of oil to a skillet medium high heat. When the oil is hot, take out a spoonful of the mixture and carefully put it into the hot oil. Don't over crowd.


4. When the edges start to brown flip and cook the other side. Place on a pan with paper towel.
